If I could do anything without the worry of failure or making enough money to live, I think I'd own a cafe. I always loved working at a cafe and it's hard not to want what I see all the time at Denver Bicycle Cafe owned by our friends Peter and Jessica. Their success has been truly inspiring. Unfortunately I have neither the drive or mindset for "business."
However, I'd still like to pursue Raw Food full time if possible. Who knows what form that might take. I could be a personal chef, I could have a food delivery service. Or ideally, one of my friends *cough* Mary *cough cough* could open up her yoga studio and I could have an adjoining cafe serving up healthy snacks to yogis, stupid hippies, and even other athletes like myself looking for whole food, high energy options at convenient times.
So I made a survey trying to judge the reception of something like that here:

(If the actual survey doesn't pop up, you can access it here: RAW FOOD CONCEPT)
I'm going to make printable fliers with QR codes to get to the survey and post them around town. I don't know what kind of responses I'll get, but hopefully it's enough to judge whether spending the money on a Raw Food culinary certificate is actually worth it beyond my own desire.
I think it's a great dream that I might hold on to for a few years, but all of my friends tell me now is the time to do it before it becomes "a thing" since there isn't a dedicated restaurant to Raw Food yet. If only I were in a financial position to do so.

Feel free to also take the survey, even if you don't live in Denver, but be honest about your feelings toward it. Would you really frequent a place like this for those prices? Why or why not?
